Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly marked with the date the products are to either be used or discarded. Potentially hazardous food that have been prepared and stored in the under counter refrigeration unit by the point of sale, the under counter reach-in coolers in the kitchen, the “long” reach-in cooler and the walk-in cooler are not properly date labeled. Materials that are used in the construction of utensils and food contact surfaces may not allow the migration of dangerous substances to the food. Potentially hazardous raw food stored in direct contact with thank you bags in the chest freezer in the kitchen. Thank you bags are not food grade material. The water was shut off to the handwashing sink in the dishwashing area due to plumbing leak. The leak must be repaired and a continuous supply of hot and cold water must be maintained in the handwashing sink. A hose was stored below the flood rim of the sink. An air gap must be maintained between the water supply inlet and the flood rim of the plumbing fixture. The hose was equipped with a nozzle allowing the hose to be kept under pressure. An atmospheric vacuum breaker must not be kept under constant pressure. Handwashing sinks are to be used for no other purpose but handwashing. Scouring pads were stored in the handwashing sink in the dishwashing area.

The dishes and utensils are not being sanitized in the dishwashing machine. Although sanitizer is being dispensed, the water from the hose shuts off. Therefor, the sanitizer is not being dispensed. Technician has been called and the machine will be serviced tomorrow. Until such time as the dishwashing machine is repaired, dishes and utensils must be sanitized in the three-compartment sink using a proper concentration of sanitizing agent. Working containers used to store poisonous or toxic materials such as cleaners and sanitizers must be labeled with the common name of their contents. A spray bottle of sanitizing agent in the wait station was not labeled.
