Until such time as this unit can maintain proper food temperatures, it must be placed out of service. Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly labeled with the date the product is to either be consumed or discarded. Sliced watermelon stored in the refrigeration unit without a date label.
