An employee was observed making bare hand contact with ready-to-eat foods while packaging brownies. Food contact surfaces of equipment and utensils must be kept clean to the sight and touch. The can opener blade was soiled with an accumulation of dried on food particles.

Roast beef in the warming unit was measured at 120° Fahrenheit. Dishes and utensils must be sanitized immediately after being washed and rinsed. The dishwashing machine is not dispensing a proper concentration of sanitizing agent. Until such time as the dishwashing machine is repaired, all dishes and utensils must be sanitized in the three-compartment sink using a proper concentration of sanitizing agent.
