Food packages must be in good condition and protect the integrity of the contents so that food is not contaminated. Five of 10 cans of food products with severe dents on the seams were found on the storage shelf. Foods must be protected from contamination. A small meat cleaver was stored in a crack between two under-counter reach-in coolers. Materials used in the construction of utensils and food contact surfaces of equipment may not allow migration of deleterious substances. Cooked egg rolls were stored in a cardboard box. Box was not a food-grade container. Spray bottles of toxic items stored next to food. Toxic items must be stored in a manner that does not allow for contamination.

Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135° Fahrenheit or above and cold foods at 41° Fahrenheit or below. Waffle batter was measured at 50° Fahrenheit. Handwashing sinks must be easily accessible at all times. The handwashing sink in the dish washing area was blocked by the large container stored in it.
