Food stored directly in contact with “thank you” bags in the walk-in cooler, walk-in freezer and under counter reach-in cooler. Food must be protected from contamination by proper storage. Raw shell eggs stored next to produce in walk-in cooler. Onions stored below raw seafood and poultry in the walk-in cooler. Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 131° Fahrenheit or above and cold foods at 41° Fahrenheit or below. A large container of cooked chicken in the walk-in cooler measured at 45° Fahrenheit. Cooked noodles in the walk-in cooler measured at 43° Fahrenheit. Food products in the make table across from the wok measured between 47° and 70° Fahrenheit. The minimum temperature the under counter reach-in cooler and make table across from the wok can maintain is 44° Fahrenheit. Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly labeled with the date the product must be either consumed or discarded. Cooked noodles in the walk-in cooler not date labeled, cooked noodles in the “Coke” cooler by the hand sink in the food preparation area not date labeled. Food contact surfaces of equipment and utensils must be kept clean to the sight and touch. The ice chute on the soft drink dispenser is soiled with an accumulation of a mold-like substance. The nozzles on the soft drink dispenser are soiled with an accumulation of a mold-like substance. The exhaust hood has an accumulation of grease droplets forming around its edges. The grease droplets could fall onto foods being prepared below. An air gap must be maintained between the water supply inlet and the flood rim of the plumbing fixture.
