Mouse droppings are throughout the facility. A professional pest service must be hired to minimize the presence of mice. Receipts must be provided to this department and rodent droppings removed. Food had temperatures between 43 and 44° Fahrenheit. All food to be moved to the second walk-in cooler with shelf date reduced to four days. First cooler not to be used until it can maintain proper temperatures. Ready-to-eat, refrigerated, potentially hazardous food prepared and held in a retail food establishment for more than 24 hours shall be clearly marked to indicate the date by which the food shall be consumed. The kitchen reach-in cooler had multiple aged foods without date marking. Salsa pan observed with mold in it. Equipment food contact surfaces and utensils shall be clean to sight and touch. The can opener was soiled with residue. The ice machine needs cleaned and has residue and mildew or mold inside. Plumbing system must be maintained in good repair. The handwashing sink in the ware wash area is draining onto the floor and has no plumbing. A plumbing system shall be installed to preclude backsiphonage of contaminant into the water supply system at each point of use at the retail food establishment. Spray nozzles utilized under consistent pressure must have backsiphonage protection if continued to be in use at facility. Handwashing facility shall be accessible at all times. The handwashing station in the ware wash area was blocked with dirty pans inside the sink. Poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, and single use and single service articles. Ibuprofen bottles were stored above uncovered tea containers in the server prep area and hand sanitizer was stored next to single service items near the hostess table.
