The owner of a retail food establishment shall warn consumers of significantly increased risk of foodborne illness caused by consuming foods of animal origins such as beef, eggs, fish, lamb, milk, poultry or shellfish. Such consumer advisory shall be written brochures or menu advisories. Contamination of foods must be prevented by proper storage of utensils. Two knives were stored in the crack between the under counter reach-in cooler and the grill. Food contact surfaces or equipment and utensils must be kept clean to the sight and touch. Grease droplets are forming along the edges of the exhaust hood. These droplets could fall onto foods being prepared below. The can opener blade is soiled with an accumulation of dried on food residue. The dishwashing machine is not dispensing sanitizer. The green bucket of sanitizer is empty. There is not another container on the premises. Until such time as the new sanitizer arrives for the dishwashing machine, all dishes and utensils must be sanitized in the sink using a proper concentration of sanitizing agent.
