A food employee may drink from a closed beverage container if the container is handled in a manner that prevents contamination. Improper personal beverage containers were found in the kitchen prep area next to the cutting board. Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be properly labeled with the date or day by which the food shall be consumed, sold or discarded. Some salsa in the front reach-in cooler was not date labeled. A handwashing station shall be accessible at all times. The handwashing station was blocked by a cart. Poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, and single use and single service articles. Fabric softener was sitting next to food on the floor and cleaning chemicals stored next to disposable paper towels had spilled.

The facility is working to get the roach infestation under control; Terminex is the company treating it. Glue traps were noted from Nov. 14, 2023, as well as the use of duct tape behind the food prep cooler. The corporate office of Huck’s has been trying to get service records from Terminex but has not been successful. The last treatment was Dec. 27, 2023. This department recommends weekly treatments and an updated service schedule, as well as all service records, must be provided to this department. The three-door freezer must be cleaned out and fumigated for roaches, if available.
