The fire suppression system over the exhaust hood has grease droplets on it that could fall onto food being prepared below. Working containers used to store toxic and poisonous materials such as cleaners and sanitizers must be clearly labeled with the common name of their contents. A spray bottle of cleaning agent in the wait station is not labeled.

It should be held at or under 41° Fahrenheit for a maximum of seven days. Unlabeled carnitas, cooked chicken and other unlabeled food items were found in the walk-in cooler with dates ranging from Jan. 7, 2024 to unknown. The employee bathroom near the bar does not have hot water. The plumbing system must be in good repair. Poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, and single-use or single-service items. Containers of hydrogen peroxide, glass cleaner and bleach cleaner were stored above disposable towels and napkins in the server area.

Approximately 58 eggs were stored at room temperature on the counter and approximately 18 pounds of butter labeled “keep refrigerated” was held at room temperature. Working containers used to store poisonous or toxic materials such as cleaners and sanitizers must be clearly labeled with the common name of their contents. Spray bottles of unlabeled cleaner were stored in the coffee bar area and by the handwashing sink in the dish area.
