One 3 pound, 5 ounce can of baby corn and one 6 pound, 7 ounce can of bamboo shoots with severely dented seams were found on the shelf in the storage area. A container of black beans prepared in house was found at room temperature and seven raw shell eggs were stored at room temperature. Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135° Fahrenheit or above, and cold foods at 41° Fahrenheit or below. Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly labeled with the date the product is to either be consumed or discarded. Two containers of cooked chicken, two large bowls of rice and black beans in oil were not properly date labeled. A small cleaver was stored in the crack between two under-counter reach-in coolers. Foods must be protected against all types of contamination.

All potentially hazardous foods must be kept at or below 41° Fahrenheit. The spray nozzle for the three-bay sink is laying in the sink and does not stay above the flood rim on its own. An air gap must be maintained between plumbing fixtures and flood risks.

Products in the rear assembly table were measured between 48 and 52° Fahrenheit. The air temperature inside the cooler measured around 50° Fahrenheit. Until such time as this unit can maintain proper temperatures, it shall be placed out-of-service and all products moved to a properly operating cooler.
