An employee drink in an open container was stored in the food prep area. Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135° Fahrenheit or above and cold foods at 41° Fahrenheit or below. Quesabirra was measured at 112° Fahrenheit, asada was measured at 75° Fahrenheit, al pastor was measured at 75° Fahrenheit and two dozen raw shell eggs were stored at room temperature. The handwashing sink in the grill area drains very slowly and as it drains, waste water comes up through the floor drain. A plumber must be retained to correct this problem. There is an inadequate supply of hot water as the water was used for food preparation and dishwashing, the water heater cannot keep up with the needed supply. The water reached a maximum temperature of 88° Fahrenheit at the mop sink. The water reached a maximum temperature of 67° Fahrenheit at the handwashing sink in the men’s restroom. Either the water heater must be repaired or replaced by 3-24-23.

Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly marked with the date the products are to either be used or discarded. Potentially hazardous food that has been prepared and stored in the under counter refrigeration unit, the under counter reach-in coolers in the kitchen, the “long” reach-in cooler and the walk-in cooler are not properly date labeled. Potentially hazardous raw food stored in direct with thank you bags in the chest freezer in the kitchen. Thank you bags are not food grade material. The water was shut off to the handwashing sink in the dishwashing area due to a plumbing leak. The leak must be repaired and a continuous supply of hot and cold water must be maintained in the handwashing sink. A hose was stored below the flood rim of the mop sink. An air gap must be maintained between the water supply and the flood rim of the plumbing fixture. The hose was equipped with a nozzle allowing the hose to be kept under pressure. An atmospheric vacuum may not be kept under constant pressure. Remove the hose from the sink and place a double check valve on the plumbing fixture. Handwashing sinks are to be used for no other purpose but handwashing. Scouring pads were stored on the handwashing sink in the dishwashing area.

Bar ware washing machine is not dispensing adequate sanitizer. Concentration level must be at least 25 ppm. Items must be sanitized in sink. Spray nozzle in ware washing area does not self retract and is laying in the sink trough. An air gap or at least one inch must be maintained or a proper back siphon prevention device must be installed. Hand sink in bar is used as dump sink for coffee. Hand sinks must only be used for washing hands and no other purpose.
